Cinnamon Simple Syrup
- 1 cup1 cup1 cup Water
- 1 cup1 cup1 cup Sugar, Raw

Pear Gin Fizz
- 2 oz2 oz2 oz Gin
- 2 oz2 oz2 oz Pear Juice, I used Pear Nectar
- 1 oz1 oz1 oz Lemon Juice, freshly squeezed
- 0.5 oz0.5 oz0.5 oz Simple Syrup, the Cinnamon Simple Syrup from above

- 1 whole1 whole1 whole Egg Whites
- 1 oz1 oz1 oz Club Soda, to top

- Cinnamon Simple Syrup
- Combine all the ingredients in a pot over medium heat.
- Stir until all the sugar is dissolved. Bring to a boil and then turn the heat to low and simmer for about 10 minutes, uncovered.
- Remove the pot from the heat and let the mixture sit for at least 15 minutes.
- Remove cinnamon sticks and funnel syrup into a clean airtight bottle with a lid.
- Pear Gin Fizz Recipe
- Fill a cocktail shaker halfway with ice.
- Add the gin, pear nectar, lemon juice, cinnamon simple syrup and egg white to the shaker. Shake vigorously for about 10 seconds.
- Strain into two cocktail glasses. Top with the desired amount of club soda: garnish and sip. Cheers!
