Persian Gondi (Savory Chicken and Chickpea Dumplings in Broth)
Persian gondi is a flavorful and comforting dish that has been a beloved staple in many Jewish-Iranian households for generations. These tender, spiced chicken or turkey meatballs, often made with chickpea flour and aromatic seasonings like cardamom, are traditionally served in a rich, golden broth. While gondi is a classic appetizer for Shabbat dinner, its hearty and nourishing qualities make it a favorite in my home year-round. My two little ones love its warm, savory flavors so much that we often enjoy it as a full meal on chilly weeknights—it’s the perfect bowl of comfort!
Ingredients
- 222 Yellow Onion
- 111 Egg

- 2 tsp2 tsp2 tsp Cardamom, Ground

- 2 Tbsp2 Tbsp2 Tbsp Avocado Oil
- 1.5 tsp1.5 tsp1.5 tsp Salt

- 0.5 tsp0.5 tsp0.5 tsp Black Pepper

- 2 cups2 cups2 cups Chickpea Flour
- 1 lb1 lb1 lb Ground Chicken

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Purée your onions in a food processor. Transfer to a large bowl, and whisk in the egg, garlic, cardamom, turmeric, oil, salt, and pepper. Mix in the chickpea flour and chicken to form a thick paste. If you have time, cover and store the batter in the refrigerator for at least a half hour to firm up. If low on time, which I usually am, it’ll still work but may be difficult to shape into perfect spheres.
- Wet your hands with cold water and taking about an ice cream scoop amount, roll them into smooth spheres.
- In a large pot, bring the chicken broth to a rapid boil. Carefully drop the dumplings into the stock. Turn down the heat to low, cover, and simmer for 25-30 minutes or until a thermometer reads at least 165F for the center of the gondi. Enjoy!
