- sautéed frozen vegetables (click for recipe)
- Tomato, Cherry, sliced

- Balsamic Vinegar, for sautéing tomatoes

- Classic Monkfruit Sweetener (with Allulose) - Lakanto, for sautéing tomatoes

- Parmesan Cheese, shredded

- Mozzarella Cheese, shredded
- Basil, Fresh

- Red Pepper Flakes

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- first make a batch of basil pesto.
- in a large skillet, add fat of choice & melt.
- in a bowl, mix together chicken thighs, salt, & pepper.
- add in chicken thighs to skillet; cook for 6-8 minutes; pour pesto into the chicken mixture + ~ÂĽ cup water; simmer for 8-10 minutes.
- in a separate skillet, saute peppers & onions.
- option to saute tomatoes in a little balsamic vinegar & monk fruit or just dice & serve raw.
- to build nachos, add pita crackers→ sautéed peppers & onions → pesto chicken → cheese → tomatoes → garnish with fresh basil & red pepper flakes.
