Pico de Gallo
Our family has affectionately named this strictly "pico" since we've been enjoying it for so many years and is requested, or should I say "expected" whenever there are tacos, tostadas, HUARACHAS or my GREEN CHILI BURRITOS happening. It's also a key ingredient for my easy and oh so tasty guacamole! Perfect for topping any of those items mentioned, or simply enjoyed as "chips & salsa" using whatever chip is your favorite.
Ingredients
- 2 cups2 cups2 cups Roma Tomato, diced
- 4 - 5 Tbsp4 - 5 Tbsp4 - 5 Tbsp Green Onion (Scallion), sliced
- 4 - 5 Tbsp4 - 5 Tbsp4 - 5 Tbsp Vidalia Onion, diced, can sub onion of choice
- .5 - 1 whole.5 - 1 whole.5 - 1 whole Jalapeño Pepper, seeded, deveined and finely chopped - use the full pepper if you want it a bit spicier
- .5 tsp.5 tsp.5 tsp Real Salt - Redmond
- .125 tsp.125 tsp.125 tsp Chipotle Chile Powder - The Spice Lab, optional
- .25 cup.25 cup.25 cup Cilantro, roughly chopped
- .5 tsp.5 tsp.5 tsp Black Pepper, or to taste
- 2 - 3 whole2 - 3 whole2 - 3 whole Lime, juice of 2-3 depending on how juicy they are or to taste
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a medium size glass bowl, add ingredients in the order listed and stir gently. If you stir this too much, the tomatoes can get mushy.
- Taste and adjust seasoning with additional salt and/or lime juice.
- If you want to add more heat, you can use the entire jalapeño and even leave the seeds/veins in to ramp up the heat.
- Use to "chip and salsa" for a tasty snack, or serve with tacos, tostadas. flautas or burritos,
