Our family has affectionately named this strictly "pico" since we've been enjoying it for so many years and is requested, or should I say "expected" whenever there are tacos, tostadas, HUARACHAS or my GREEN CHILI BURRITOS happening. It's also a key ingredient for my easy and oh so tasty guacamole! Perfect for topping any of those items mentioned, or simply enjoyed as "chips & salsa" using whatever chip is your favorite.

Process

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a medium size glass bowl, add ingredients in the order listed and stir gently. If you stir this too much, the tomatoes can get mushy.
  2. Taste and adjust seasoning with additional salt and/or lime juice.
  3. If you want to add more heat, you can use the entire jalapeño and even leave the seeds/veins in to ramp up the heat.
  4. Use to "chip and salsa" for a tasty snack, or serve with tacos, tostadas. flautas or burritos,
