Huaraches (paleo/gluten free)
A tasty Mexican dish that can be topped with your protein of choice along with your favorite garnishes and salsa. I'd suggest my TOMATILLO CHICKEN, pictured above. The word for "sandal" in Spanish is HUARACHE -- and the first time I was offered one of these at a local restaurant I was immediately intrigued. The shape of the base is literally the shape of a sandal, how fun is that!
Ingredients
- 1 cup1 cup1 cup Non-GMO Cassava Flour - 5 lb Bag - Otto's Naturals
- 1 cup1 cup1 cup Almond Flour
- 2 Tbsp2 Tbsp2 Tbsp Arrowroot Flour
- 1.5 tsp1.5 tsp1.5 tsp Grain-Free Baking Powder - Otto's Naturals
- 1 tsp1 tsp1 tsp Real Salt - Redmond
- .125 tsp.125 tsp.125 tsp Cumin, Ground
- .33 cup.33 cup.33 cup Lard, melted and slightly cooled, can sub organic Spectrum shortening
- .5 cup.5 cup.5 cup Bone Broth, + 2 tbsp, flavor of choice
- .25 - .50 cup.25 - .50 cup.25 - .50 cup Tomatillo Chicken, Shredded (click for recipe)

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Combine all dry ingredients in a large bowl and whisk to combine.
- Pour melted lard into dry ingredients and use a wooden spoon to combine. You should have a very damp, sand like texture.
- Pour in the half cup of the bone broth and either mix with your hands or spoon. Dough should be similar to wet sand at this point but not soaking. If it’s too dry, add the extra bone broth–if it’s too wet, add a bit more cassava flour.
- Divide dough into 6 balls and keep them covered with plastic as you shape each one. Place dough ball onto a piece of lightly dusted parchment paper, flatten and shape into an oval or oblong sandal shape measuring about 4”x6” and approximately ¼” -⅓ “ thick.
- Place in a dry cast iron pan (or griddle), that’s been preheated over medium heat, turning with a spatula and cooking until browned on both sides and cooked through.
- Remove from the pan and repeat with remaining dough balls, keeping them warm in the oven as you cook the rest of the dough.
- Serve with favorite protein, salsa and garnishes.
