Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 350°F/177°C. Line a 9×9-inch baking pan with parchment paper so that it hangs over the sides.
  2. In a food processor bowl, pulse together the oats, flour, brown sugar, cinnamon, and salt a few times to mix. Add the butter and pulse together until a crumbly mixture forms. The mixture should hold together when you squeeze it.
  3. Press 1/2 of the dough into the bottom of the prepared baking pan. Bake for 10-12 minutes or until lightly golden brown.
  4. Meanwhile, in a medium bowl, add the plums, sugar, cornstarch, vanilla, and salt. Gently stir to combine. Spoon the mixture into an even layer onto the warm crust. Sprinkle the remaining dough over the plums. Transfer to the oven and bake for 30-40 minutes or until the crumble is light golden brown.
  5. Allow bars to cool completely before cutting.

Alternatively, you can store it in a freezer-safe container or bag in the freezer for up to 3 months. Storing: Store in an airtight container in the refrigerator for up to 1 week. You can also wrap these bars individually and store them in a freezer-safe container in the freezer for up to 3 months. Allow the bars to thaw in the refrigerator overnight.
