probiotic powerhouse panini
truly, this panini is a probiotic masterpiece: kefir (or greek yogurt), probiotic hot sauce, fermented veggies (I used different ferments from olive my pickle!), & aged cheese all layered into one melty, crispy bite. 🥪✨
it’s functional, flavorful, & downright phenomenal. your gut is going to thank you for this goodness!

Ingredients
probiotic powerhouse sauce
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Kefir, or greek yogurt
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto

- 1 Tbsp1 Tbsp1 Tbsp Hot Sauce, I used olive my pickle's fermented hot sauce
- 1 tsp1 tsp1 tsp Dijon Mustard

- 1 tsp1 tsp1 tsp Dill Pickle Juice, make sure they are fermented

- Salt and Pepper, to taste

- Tuna, Canned, drained, may sub any protein

- Dill Pickle Slices, or any fermented veggies

- Okra, or any fermented veggies
- Gouda Cheese, or any sliced aged cheese

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- in a bowl, combine all ingredients for the probiotic powerhouse sauce.
- in a separate bowl, mix together, tuna, sauce, & fermented veggies.
- if using bread from the freezer (that’s where I store mine), first microwave for 45 seconds to thaw.
- to one half of bread, add ½ tuna mixture, slice of aged cheese of choice, other ½ tuna mixture, & top with other slice of bread.
- to a hot panini (I put mine at 400), add sandwich & press panini down until golden, gooey, & crispy brown.
- slice in half & serve with extra sauce & veggies!
