Protein Cookie Dough Bark
Busy moms, this one’s for you! This high-protein cookie dough bark is made with cottage cheese (don’t knock it till you try it!), naturally sweetened, and loaded with chocolatey goodness—no baking required! - 1 cup1 cup1 cup Cottage Cheese, Low-Fat
- 2 Tbsp2 Tbsp2 Tbsp Cashew Butter, see notes
- 2 Tbsp2 Tbsp2 Tbsp Pure Maple Syrup
- 2 tsp2 tsp2 tsp Pure Vanilla Extract
- 0.75 cup0.75 cup0.75 cup Almond Flour

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Blend the wet ingredients together until smooth.
- Add the dry ingredients, up to the chocolate chips, in a large bowl and mix with the blended ingredients.
- Fold in the chocolate chips and spread on a small baking sheet lined with wax or parchment paper. You want it to be a little thick so don't spread over the entire baking sheet.
- Freeze while you melt your chocolate topping.
- Pour the melted chocolate over the bark and spread. Freeze for at least 2 hours before breaking apart. Store in freezer.
Notes
You can use another nut/seed butter but it may change the taste slightly.
