Protein Sugar Cookies
When your sweet tooth calls but you have protein goal - make these protein sugar cookies. It took me three tries to get these right and they were well worth the wait! One of you had requested a sugar cookie version of my cottage cheese cookies (I have about 10 other flavors btw!) and these really delivered!
These are softer than a typical cookie, have the perfect sweetness and zero cottage cheese taste! Each cookie has about 14g of protein 🥳

Ingredients
- 1.5 cup1.5 cup1.5 cup Cottage Cheese, Low-Fat
- 0.5 cup0.5 cup0.5 cup Protein Powder, Vanilla Bean - Just Ingredients
- 0.25 cup0.25 cup0.25 cup Cashew Butter
- 0.25 cup0.25 cup0.25 cup Monk Fruit Sweetener
- 0.25 cup0.25 cup0.25 cup Applesauce, Unsweetened
- 0.333 cup0.333 cup0.333 cup Coconut Flour
- 1 tsp1 tsp1 tsp Vanilla Extract

- Blend cottage cheese, applesauce, vanilla together until smooth.
- Stir in a bowl with the rest of the ingredients.
- Scoop onto parchment lined baking sheet. I used a spoon and spread into a large circle. They will be wet but you should be able to scoop them onto the sheet and hold their shape. They will spread slightly when baking.
- Bake 350 for 18 min. Let cool for at least 10 min - they will firm as they cool.
Notes
I made these large so there was only 7 cookies, but if you wanted to make them smaller it should make around 10-12. These are softer than a typical cookie.
