Puerto Rican Style Baked Chicken (Pollo al Horno) (Edit recipe)

Puerto Rican style baked chicken or pollo al horno has to be one of my favorite ways to eat chicken! This dish is made with simple ingredients but the result will taste like restaurant-style chicken. You know that Latin restaurant that you love ordering take-out from? YES just like that but even better!

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat oven to 375 degrees.
  2. Clean chicken:
  3. Clean chicken thoroughly with cold water and vinegar or lime juice. Set aside.
  4. Make marinade:
  5. To a large mixing bowl, add olive oil, lime juice and all seasonings. Add chicken to the bowl and mix well until all pieces are completely coated with marinade. Allow chicken to marinate for at least 30 minutes or overnight. The longer the chicken marinates, the better it will taste.
  6. Bake chicken:
  7. Place chicken in a baking pan and pour any extra marinade over the chicken. Add about 1/2 cup of water to the pan so that the chicken doesn't dry out while baking.
  8. Bake uncovered at 375 degrees for 1 hour and 20 minutes, checking about halfway through to make sure the liquid in the pan is not dry.
  9. Bake at 425 degrees for about 10 minutes or until chicken is golden brown. Keep an eye on it for the last few minutes so it doesn't burn.
  10. Serve chicken and pour those yummy drippings right on top. Enjoy!
