Pumpkin Pie Energy Bites
This no-bake energy ball is the perfect way to get your pumpkin spice fix this autumn! Gluten-free and vegan, these energy bites are great for an anytime-of-the-day snack and store well in the freezer to always have on hand. They take minutes to thaw and have all the fall feels... so satisfying!
Ingredients
- 1 cup1 cup1 cup Almond Flour, Can also sub with oat flour
- 2 pieces2 pieces2 pieces Graham Crackers, crushed
- 0.666 cup0.666 cup0.666 cup Cashew Butter, Can sub almond butter
- 0.5 cup0.5 cup0.5 cup Pumpkin Purée
- 6 Tbsp6 Tbsp6 Tbsp Pure Maple Syrup
- 0.25 cup0.25 cup0.25 cup Mini Marshmallows, Optional
- 1 Tbsp1 Tbsp1 Tbsp Pumpkin Pie Spice, For homemade, use 1 tsp ground cinnamon, ¼ teaspoon ground nutmeg, ¼ teaspoon ground ginger, and ⅛ teaspoon ground cloves or Allspice
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.25 tsp0.25 tsp0.25 tsp Sea Salt
- 121212 Gluten Free Pretzel Sticks

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Line a baking sheet with parchment paper.
- In a large bowl, combine all ingredients except the pretzel sticks.
- Mix well until a batter forms. Using a cookie scoop or your hands, shape into balls and place on the parchment paper.
- Take a toothpick and insert pumpkin lines around the pumpkin. Break a pretzel stick in half and insert it into the top of the "pumpkin". Store in the freezer, let it thaw a few minutes before serving, and enjoy!
