This no-bake energy ball is the perfect way to get your pumpkin spice fix this autumn! Gluten-free and vegan, these energy bites are great for an anytime-of-the-day snack and store well in the freezer to always have on hand. They take minutes to thaw and have all the fall feels... so satisfying!

  1. Line a baking sheet with parchment paper.
  2. In a large bowl, combine all ingredients except the pretzel sticks.
  3. Mix well until a batter forms. Using a cookie scoop or your hands, shape into balls and place on the parchment paper.
  4. Take a toothpick and insert pumpkin lines around the pumpkin. Break a pretzel stick in half and insert it into the top of the "pumpkin". Store in the freezer, let it thaw a few minutes before serving, and enjoy!
