Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a large mixing bowl, add softened cream cheese and sour cream. Use a hand mixer to blend until smooth and creamy.
- Add shredded cheddar, chopped chives and ranch seasoning. Mix until evenly combined.
- Transfer the mixture onto a large piece of plastic wrap. Form it into a round ball, then tightly wrap it in the plastic.
- Use three pieces of baker’s twine to gently tie around the wrapped cheese ball, spacing them evenly to create indents that mimic pumpkin ridges. Tie securely but not so tight that the cheese squishes out.
- Refrigerate for at least 2 hours, or up to overnight, to allow the flavors to meld and the shape to set.
- Spread the crushed Doritos on a plate. Unwrap the cheese ball and roll it gently in the crumbs, pressing lightly to fully coat.
- Place on a serving platter, insert the bell pepper stem at the top, and serve with pretzel crackers or fresh vegetables.
Notes
If you don't have Doritos, any cheese-flavored tortilla chip will work for the cheese ball coating. For an added bit of spiciness, add a few drops of Tabasco or similar hot sauce to the cheese ball when you add in the chives and spice mix.
