Pumpkin Spice and White Chocolate Cookies
I am convinced pumpkin and white chocolate are a match made in heaven. These pumpkin spice cookies have a soft and cakey texture with gooey bites of white chocolate flowing throughout.
Ingredients

- 0.5 Tbsp0.5 Tbsp0.5 Tbsp Pumpkin Pie Spice
- 0.333 cup0.333 cup0.333 cup Brown Sugar
- 0.333 cup0.333 cup0.333 cup Granulated White Sugar
- 0.5 cup0.5 cup0.5 cup Unsalted Butter, softened at room temperature
- 1 whole1 whole1 whole Egg
- 0.75 cup0.75 cup0.75 cup Pumpkin Purée
- 0.5 tsp0.5 tsp0.5 tsp Baking Powder
- 0.5 tsp0.5 tsp0.5 tsp Baking Soda
- 1 tsp1 tsp1 tsp Pure Vanilla Extract
- 0.5 tsp0.5 tsp0.5 tsp Salt
- 1 cup1 cup1 cup White Chocolate, can use chips or chunks

Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350 degrees.
- In a large mixing bowl, cream the butter and both sugars until smooth.
- Add in the egg, vanilla, and pumpkin puree and mix until combined.
- Next, add in the flour, pumpkin spice, baking powder, baking soda and salt and mix until combined without over mixing.
- Finally, stir in the white chocolate chips.
- Using a small cookie scoop, scoop the dough onto your prepared baking sheets. The dough should make about 26-28 cookies.
- Bake for about 12-14 minutes, or until the edges start to get golden brown. You can even check if they are ready by lifting the cookies and checking if the bottoms have slightly browned.
- Let them cool on the cookie sheets for at least five minutes and enjoy!
