These little roasted pear bites have everything I want in a fall appetizer—sweet, savory, creamy, a little salty, a little heat, and plenty of crunch. Roast Seckel pears with a touch of pumpkin pie spice, then fill with whipped ricotta and blue cheese, top with fresh thyme and Lark Ellen Pumpkin Spice Granola, and finish with a drizzle of hot honey. And that granola? Don't skip it. The pumpkin-spiced crunch against the soft roasted pear and creamy cheese is what makes the whole bite. These are perfect for a fall dinner party, cocktail hour, or set out before the big Thanksgiving feast.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Preheat the oven to 375°F and line a baking sheet with parchment paper.
  2. Slice the Seckel pears in half lengthwise. Remove the seeds and use a small spoon or melon baller to hollow out the center just slightly, creating enough room for the cheese filling.
  3. Lightly brush the pears with olive oil and sprinkle with pumpkin pie spice. Place them cut-side down on the prepared baking sheet.
  4. Bake for about 10 minutes, or just until the pears begin to soften but still hold their shape. Remove from the oven and let cool for about 5 minutes.
  5. Meanwhile, add the ricotta, blue cheese and 1 teaspoon olive oil to a small food processor or blender. Blend until smooth and creamy.
  6. Turn the pears cut-side up and spoon the whipped ricotta mixture into the hollowed centers.
  7. Sprinkle the pears with fresh thyme and Lark Ellen Pumpkin Spice Granola.
  8. Finish with a drizzle of hot honey and serve.

Notes

I love Seckel pears for their size and sweetness, but if they are hard to find, you can substitute Bartlett or Anjou pears.

You can reduce the amount of blue cheese for a milder flavor or swap it for goat cheese.

If hot honey isn't your thing, regular honey works beautifully. You'll still get that sweet drizzle that ties together the pear, creamy cheese, thyme and pumpkin spice.
