  1. Preheat your oven to 350 degrees.
  2. Grease a muffin pan or add cupcake liners to the pan.
  3. In a blender, add your eggs, cottage cheese and pumpkin puree. Blend together. Pour into a mixing bowl. Add all of your other ingredients and stir together until your batter forms.
  4. Pour into the muffin pan.
  5. Place pan in the oven and bake for 18-20 minutes.
