Potato Crust Quiche
This crispy potato crust quiche is the perfect make-ahead breakfast or brunch! Ingredients
Potato Crust
- 7 whole7 whole7 whole Yukon Gold Potatoes, less or more depending on size
- 1 tsp1 tsp1 tsp Avocado Oil Spray, or olive oil
- 1 pinch1 pinch1 pinch Sea Salt

Quiche Filling
- 6 whole6 whole6 whole Eggs, Pastured
- 0.333 - 0.5 cup0.333 - 0.5 cup0.333 - 0.5 cup Plain Greek Yogurt
- 1 cup1 cup1 cup Cheddar Cheese, reserve some for topping

- 6 - 8 pieces6 - 8 pieces6 - 8 pieces Bacon, cooked until crispy and chopped (reserve some for topping)

- 1 - 1.5 cups1 - 1.5 cups1 - 1.5 cups Broccoli, steamed OR raw spinach chopped
- 0.25 tsp0.25 tsp0.25 tsp Salt and Pepper, or to taste

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 425F. Grease a 9 inch springform pan.
- Bring a large pot of salted water to a boil. Add the halved potatoes and cook until fork tender, about 15-20 minutes.
- Press the potatoes evenly into the bottom and about 1.5 inches up the sides of the prepared pan. Season with salt and lightly spray with avocado or olive oil.
- Bake the crust for 25-30 minutes, until lightly golden and beginning to crisp around the edges.
- In a large bowl, whisk together the eggs, Greek yogurt, cheddar cheese, salt and pepper. Fold in the chopped broccoli and bacon.
- Pour the filling into the baked potato crust and sprinkle with a little extra cheddar cheese.
- Reduce the oven to 375F and bake for 30-35 minutes, or until the center is just set and a knife inserted near the center comes out clean.
- Garnish with fresh chives and bacon bits.
