Sweet Potato Frittata (paleo, GF)
My family loves quiche and frittatas. This one incorporates sweet potatoes to boost the nutrient density. The perfect way to start your day!
Ingredients
- 5 pieces5 pieces5 pieces Beef Sugar Free Bacon Slices - US Wellness Meats, cooked and then chopped

- 1 tsp1 tsp1 tsp Extra Virgin Olive Oil
- 1 cup1 cup1 cup Japanese White Sweet Potato, diced about 1” cubes
- 1 cup1 cup1 cup Purple Sweet Potato, diced about 1” cubes
- .25 cup.25 cup.25 cup Onion, any color, diced
- .5.5.5 Bell Pepper, any color, diced

- 1 tsp1 tsp1 tsp Sea Salt

- 777 Eggs, Pastured

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- In a ceramic coated skillet or nonstick (oven safe) cook the bacon on medium for 7-8 minutes until soft but cooked through. Set aside to drain.
- Leave oil in pan.
- Add olive oil and potatoes and cook for about 8-10 minutes on medium. Stir occasionally.
- Add onion, bell pepper, and sea salt. Stir.
- Chop bacon and add back into pan.
- In a small bowl crack the eggs and using a fork whisk to blend and froth a bit. This helps your frittata be fluffier.
- Turn heat off on stove.
- Pour eggs into pan. Stir and move the vegetables around as need to even out a little.
- Bake for 12-15 minutes. Time will depend on the depth of your pan. Check it until it is firm to the touch in the middle.
- Remove and let cool for one minute before cutting.
Notes
You can add 1/2 cup grated cheddar or gruyere cheese to this if you like. This gives it an added richness. I don’t typically add milk but if you want you can add 2 Tbsp of whole fat milk to the eggs when whisking. This also gives the frittata added richness.
