- Preheat gas grill to 450 degrees.
- Add ground beef to bowl with salt. Gently combine; do not over mix. Form into 4 equal-size patties.
- Lightly oil grill rack with avocado oil.
- Place patties on hot grill rack. Close lid. Cook about 4-5 minutes before turning patties. Close lid again. Cook additional 4-5 minutes for a medium burger (or cook to desired doneness). During the last minute of cooking, add Swiss cheese slices to patties. Place buns, split side-down, on grill rack. Close lid while cheese melts and buns toast.
- To assemble burgers, top bottom buns with a dollop of thousand island dressing, then place cheese-covered burger on top. Top each burger with 2 slices pastrami, folded to fit burger. Next, top pastrami with about 2 Tbsp sauerkraut and remaining thousand island dressing, close with top buns. Serve immediately.
Notes
Sub your choice of gluten-free bun to make gluten-free. Burgers can also be made in an indoor nonstick grill pan or in large, nonstick skillet on cooktop. Buns can be toasted in a separate large skillet or quickly under broiler.
