Rhubarb Gin Fizz
If rhubarb’s in season, you better believe I’m stocking up—and turning it into cocktails. This Rhubarb Gin Fizz has a beautiful soft pink hue, a cloud of froth on top, and that perfect mix of tart and sweet that keeps every sip refreshing.
Ingredients
Rhubarb SImple Syrup
- 1 cup1 cup1 cup Water
- 1 cup1 cup1 cup Granulated White Sugar

- 2 - 3 whole2 - 3 whole2 - 3 whole Rhubarb, coarsley chopped
Rhubarb Gin Fizz
- 2 oz2 oz2 oz Gin
- 1.5 oz1.5 oz1.5 oz Simple Syrup, rhubarb

- 0.5 whole0.5 whole0.5 whole Lemon, freshly squeezed

- 1 whole1 whole1 whole Egg Whites
- 1 oz1 oz1 oz Club Soda, optional

- Rhubarb Simple Syrup
- Add water and sugar to a sauce pot over medium heat.
- Stir until sugar is dissolved.
- Add chopped Rhubarb stalks. (No leaves). Let it simmer for about 10 minutes.
- Remove from heat, and let it sit for about 15 minutes.
- Strain through a fine mesh sieve, pressing rhubarb to get every last bit of the sweetness.
- Once cooled, pour into a sealed jar and store in the fridge for up to two weeks.
- Rhubarb Gin Fizz
- Fill a cocktail shaker halfway with ice.
- Add gin, rhubarb syrup, lemon juice, and egg white.
- Shake hard for 20 seconds until chilled and frothy.
- Strain into a coupe glass.
- Garnish with a sprig of thyme. Sip and enjoy.
Notes
- Want it sweeter? Add a little more rhubarb syrup.
- Prefer it tart? Up the lemon juice.
- Feeling bold? Add an extra splash of gin—you’re in charge here.
- You can absolutely skip the egg white, but that’s what gives it that pillowy froth on top. It’s not just pretty—it adds a silky texture that makes this cocktail feel extra special.
- Want it fizzy. Add a splash of club to the top after you strain the cocktail.
