Simple Green Salad (Edit recipe)

Sometimes you just need a simple side salad, and this is my go-to for spring and summer. It pairs perfectly aside grilled seafood or the protein of your choice. It's great for pizza or pasta night, too. It's made with tender leafy greens, tomato, cucumber, onion and finished with a light vinaigrette. Want to keep it vegetarian but add something special? Top it with a sprinkle of feta cheese. Dress it with the Mustard Shallot Vinaigrette recipe that's my go-to for this and many other salads.
