- Preheat oven to 350°F.
- In a large bowl, whisk together the eggs, melted coconut oil, pure maple syrup, and vanilla extract.
- Add in the almond flour, organic cornstarch, baking soda, and salt until just combined.
- Pour the batter into an 8x8 silicone baking tray. Bake for 20 minutes or until the internal temp reads 200°F and 210°F with a thermometer.
- Once the cake come out, crumble it with a mixer or spoon.
- Line a baking sheet with parchment paper. Shape the crumbs into cake pop balls and place them on the parchment paper. Freeze for 30 minutes or until the cake is hard enough to not fall apart.
- Place one cake ball on top of another and insert a cake pop stick inside. Dip into melted white chocolate and place back on the parchment paper. Decorate your snowmen with pretzel arms (we break one pretzel in half for each arm), earmuffs made of chocolate gems, chocolate chip eyes, an orange sprinkle nose, and melted chocolate for the buttons, smile, and earmuff headband drawn on by a toothpick dipped into melted chocolate. Freeze for 15 minutes or until the chocolate hardens, and enjoy!
