southwest shrimp cobb salad
cobb salads are so hearty & delicious. here is a southwestern style spin on the typical cobb. also, if you can find the fiesta cheese crisps, they really are the star of the show!
Ingredients
chipotle dressing

- 0.5 tsp0.5 tsp0.5 tsp Garlic Powder
- 0.5 tsp0.5 tsp0.5 tsp Onion Powder
- 0.5 tsp0.5 tsp0.5 tsp Chipotle Powder
- 0.5 tsp0.5 tsp0.5 tsp Smoked Paprika
- 0.25 tsp0.25 tsp0.25 tsp Chili Powder
- 1 pinch1 pinch1 pinch Salt and Pepper
- 1 Tbsp1 Tbsp1 Tbsp Classic Monkfruit Sweetener (with Allulose) - Lakanto
- 1 Tbsp1 Tbsp1 Tbsp Lime Juice
- 1 Tbsp1 Tbsp1 Tbsp Apple Cider Vinegar
salad
- 1 - 2 cups1 - 2 cups1 - 2 cups Spring Mix Salad Greens Lettuce
- 4 oz4 oz4 oz easy baked shrimp (click for recipe)
- 111 Hard Boiled Egg
- 111 Bacon
- 0.25 cup0.25 cup0.25 cup Black Beans, drained & rinsed
- 0.25 cup0.25 cup0.25 cup Frozen Corn, sautéed
- 3 - 43 - 43 - 4 Grape Tomatoes
- 2 - 4 Tbsp2 - 4 Tbsp2 - 4 Tbsp Avocado
- 0.333 - 0.5 oz0.333 - 0.5 oz0.333 - 0.5 oz Parm Crisps, I used the whisps southwest fiesta crisps
- 111 Radish, or tortilla chips for extra crunch!
