“chorizo”-style meat, endless toppings, your favorite masa's beef tallow tortilla chips (the new hatch chile flavor slaps), & a spicy twist on my classic greek yogurt ranch.

a super easy, gluten-free, protein-packed, flavorful, & balanced meal that's 100% worth adding to your weekly (or at least monthly) dinner rotation

  1. follow my instructions for making homemade “chorizo” meat.
  2. make a batch of greek yogurt ranch with the spicy southwest additions.
  3. prepare other salad toppings - saute veggies, heat beans, dice veggies, etc.
  4. to a bowl, first add a layer of leafy greens, then layer on “chorizo” meat → any/all toppings you like → masa corn tortilla chips → finish with drizzle of spicy southwest greek yogurt ranch.
