Ninja creami strawberry basil cottage cheese ice cream is a creamy, high protein low carb frozen dessert made with cottage cheese, fresh strawberries, and fresh basil. Strawberry and basil is a restaurant kitchen pairing for a reason. The basil makes the strawberry taste brighter and more intensely fruity, and together they produce something fresh, clean, and unmistakably summery. - 2 Tbsp2 Tbsp2 Tbsp Basil, Fresh

- 1 Tbsp1 Tbsp1 Tbsp Lemon Juice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add the cottage cheese and almond milk to a blender. Blend for about 2 minutes until completely smooth and whipped - no graininess, no visible curds.
- Add the strawberries, allulose, fresh basil, lemon juice, and vanilla extract. Blend until the basil is fully broken down and the mixture is one even pink color throughout. Taste and add more allulose if your strawberries are tart.
- Pour the mixture into the standard Ninja Creami pint container up to the max fill line. Do not overfill.
- Freeze for 24 hours. The base needs to be completely solid all the way through.
- Remove the pint from the freezer and leave it on the counter for 5-10 minutes before spinning.
- Install the pint in the Ninja Creami machine, select Light Ice Cream, and spin.
- Check the texture when it finishes. Crumbly or powdery means it needed more time to rest. Put the lid back on, leave it 5 minutes, and run Respin.
- Scoop and serve straight away.
Notes
- Store: Freeze in the pint container with the lid on for up to 7 days. Rest on the counter for 5-10 minutes before scooping from frozen. Run Respin if the texture seems icy.
- No-machine version: Add 1/8 teaspoon guar gum to the blended base before pouring. Freeze in a shallow container and stir every hour for the first 3-4 hours. Less smooth than the machine version but works well.
- Ninja Creami Deluxe (24oz pint): Scale all ingredients up by 50% for a properly filled pint.
- Serve with: sugar free strawberry jam
