Strawberry Cheesecake Protein Pancakes
Pancakes of the season? I’ve got you sorted! These healthy pancakes are so fresh, and fluffy and only need minimal ingredients.
Ingredients
- 0.5 cup0.5 cup0.5 cup Whole Wheat Flour
- 2 Tbsp2 Tbsp2 Tbsp Vanilla Buttercream Almond Protein Powder (Macro Mike)
- 0.5 cup0.5 cup0.5 cup Almond Milk
- 1 whole1 whole1 whole Egg, (separate the yolk from the white)
- 3 Tbsp3 Tbsp3 Tbsp Full Fat Cream Cheese
- 0.5 cup0.5 cup0.5 cup Strawberries, chopped
- 0.25 cup0.25 cup0.25 cup Whipped Cream, or to hearts content

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- In a bowl, combine all the flour, protein powder, milk and EGG YOLK ONLY (separate egg white into a different bowl) and whisk until smooth.
- Using an electric beater whisk the egg whites until stiff peaks form. Gently fold egg whites into rest of batter.
- Heat a non-stick pan to medium heat and lightly spray with oil/butter.
- Spoon mixture into pan (add as much or as little as you like, depending on what size you want your pancakes). Add 1/2 tbsp cream cheese into the centre and cover with more pancake mixture.
- Cook until bubbles appear (~2 mins) before flipping and cooking for another minute. Repeat until the batter is used up (mine made 6).
- Microwave strawberries and crush until a sauce-like forms. Spread over pancakes
- Top with more sliced strawberries and whipped cream & enjoy your high protein pancakes
