Stuffed bell peppers with rice and mixed vegetables
This delicious and nutritious dish combines rice, vegetables and bell peppers stuffed with ground beef. It is a colorful and healthy meal for the whole family. - Wash the bell peppers, cut off the top part , and remove the seeds.
- Preheat the oven to 180 degrees Celcius (350 degrees Fahrenheit).
- Heat the olive oil in a pan and sauté the onion and the garlic. Add the ground beef and fry until cooked through. Season with salt, pepper, paprika powder and oregano.
- Fill the bell pepper halves with the ground beef and place in a casserole dish.
- Place the casserole dish in the preheated oven and bake for 30 minutes.
- Meanwhile cook the rice and the vegetables.
- Mix the rice with the vegetables, arrange on plates and top with the bell peppers.
