Stuffing Muffins with Sausage, Apples & Cranberries
These gluten free stuffing muffins are crispy on the outside, tender inside, and packed with holiday flavor. Perfect for Thanksgiving or Christmas dinner!
Ingredients
- 111 Bread, loaf Schar Gluten Free Artisan White

- 2 Tbsp2 Tbsp2 Tbsp Olive Oil

- 1 lb1 lb1 lb Italian | Original Combo Pack - Nut Crumbs, Ground Sausage, Ground

- 333 Celery, ribs, diced
- 111 Onion, small Sweet, diced
- 2 cloves2 cloves2 cloves Garlic, minced

- 1 cup1 cup1 cup Dried Cranberries, Organic
- 111 Apple, Granny Smith, peeled & diced
- 1.5 cups1.5 cups1.5 cups Chicken Broth

- 222 Eggs
- .5 tsp.5 tsp.5 tsp Salt

- 1 tsp1 tsp1 tsp Sage, Ground, Ground

- 1 tsp1 tsp1 tsp Rosemary, Dried

- 1 tsp1 tsp1 tsp Thyme, Dried

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 300u00b0. Cut bread in small cubes then spread in an even layer on a baking sheet and toast for about 20 minutes.
- Meanwhile, heat oil in a skillet and cook & crumble sausage.
- Drain any grease if necessary then add celery, onion and garlic about 2-3 minutes until tender.
- Add seasonings then stir in diced apples.
- Transfer mixture to a large bowl then add dried cranberries.
- Mix together the eggs and broth in a separate bowl then pour over the stuffing mixture, tossing until everything is moistened.
- Raise oven temperature to 375u00b0 and grease muffin tins. Spoon mixture into greased muffin cups. Gently press stuffing cups and form slightly mounded tops. Bake for 25-30 minutes.
