Chicken Sausage Stuffing
Chicken sausage, fresh vegetables, whole wheat bread, pistachios, and crunchy pears make a protein-packed flavorful holiday stuffing that hits all the sweet and savory notes. Bonus: the recipe can be made gluten-free and dairy-free!
Ingredients
- 1 lb1 lb1 lb Chicken Sausage, removed from casing
- 1 Tbsp1 Tbsp1 Tbsp Salted Butter, *can sub dairy-free
- 0.5 cup0.5 cup0.5 cup White Onion, chopped
- 0.5 cup0.5 cup0.5 cup Carrots, chopped
- 0.5 cup0.5 cup0.5 cup Celery, chopped
- 0.5 cup0.5 cup0.5 cup Zucchini, chopped
- 4 oz4 oz4 oz Croutons, whole wheat *can sub gluten-free
- 1 tsp1 tsp1 tsp Salt
- 1 tsp1 tsp1 tsp Black Pepper
- 3 tsp3 tsp3 tsp Italian Seasoning
- 1 cup1 cup1 cup Chicken Broth
- 1 whole1 whole1 whole Egg, slightly beaten
- 1 whole1 whole1 whole Bartlett Pear, chopped
- 0.5 cup0.5 cup0.5 cup Roasted and Salted Pistachios, *can sub nut of choice

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat the oven to 350ºF and prepare a casserole dish with non-stick baking spray and set aside.
- In a large skillet over medium heat, brown the sausage in the butter. When it’s almost fully cooked, add the onion, carrots, celery, and zucchini. Cook for 3 more minutes or until the vegetables have softened slightly.
- Add the chicken broth, salt, pepper, and Italian seasoning and mix to combine.
- Remove from the heat and add the bread croutons. Stir to combine and cover. Allow the croutons to absorb most of the liquid, this should take approximately 5 minutes.
- Once the croutons have softened stir in the beaten egg and mix until combined.
- Add the pear and pistachios and gently toss to combine.
- Transfer the stuffing to the prepared dish and bake for 25 minutes or until the top is golden brown. Serve warm and enjoy.
Notes
Can be made dairy-free and gluten-free. You can make croutons by either cutting bread into cubes, placing them in a large baking dish, and letting it sit overnight or you can cut the cubes and put them in the oven, toasting them at 350ºF until they are like croutons, about 15 minutes or so. Finally, you can buy the toasted bread cubes in bags from the store. It’s your choice!
