- .25 tsp.25 tsp.25 tsp Nutmeg, Ground
- .25 tsp.25 tsp.25 tsp Cloves, Ground
- 333 Eggs, large
- .333 cup.333 cup.333 cup Butter, Unsalted, softened
- .5 cup.5 cup.5 cup Brown Monkfruit Sweetener - Lakanto
- .5 cup.5 cup.5 cup Sour Cream
- 1 cup1 cup1 cup Carrots, grated
- .5 cup.5 cup.5 cup Pecans, chopped
- 4 oz4 oz4 oz Cream Cheese, Full Fat, softened
- 1 tsp1 tsp1 tsp Vanilla Extract
- .25 cup.25 cup.25 cup Monk Fruit Sweetener
- .25 cup.25 cup.25 cup Pecans, to top on the frosting, chopped

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 325°F
- Toast the pecans in a medium pan over medium low heat until they are fragrant and golden brown.
- In a large bowl whisk together the dry ingredients except the brown sweetener.
- In another large bowl whisk or use a mixer to combine the wet ingredients along with the brown sweetener.
- Combine the wet and dry ingredients together and mix with a rubber spatula. Then fold in the carrots and toasted pecans until evenly spread through the batter.
- Transfer the carrot cake batter to a greased and parchment lined 9" x 5" loaf pan. Spread the batter evenly and bake at 325°F for 45 minutes or until a toothpick inserted in the centre comes out clean. (See video)
- Allow the cake to cool in the loaf pan completely before removing. Otherwise it may fall apart.
- Mix together the frosting ingredients in a medium bowl with a rubber spatula until smooth.
- Spread evenly onto the cooled cake and then dot with the toasted pecans.
