Summer Glow Fruit Salad with Vanilla Protein Cream
Juicy strawberries, blueberries, mandarin oranges, and grapes—all tossed in a creamy vanilla protein yogurt dressing that tastes like dessert and fuels like breakfast. I use Skyr icelandic yogurt which results in a creamy texture and gives a higher protein content. This is summer in a bowl!
Ingredients
- 3 cups3 cups3 cups Strawberries
- 2 cups2 cups2 cups Grapes, Green, Seedless
- 2 cups2 cups2 cups Blueberries
- 2 cups2 cups2 cups Mandarin Orange Segments
- 1 cup1 cup1 cup Skyr, Plain - Icelandic Provisions
- 50 grams50 grams50 grams Vanilla Protein Powder, 2 scoops
Process

- Wash and prep all fruit: slice strawberries, remove any stems, and peel mandarins.
- In a medium bowl, whisk together the yogurt and whey protein until smooth and creamy.
- In a large mixing bowl, combine all the fruit.
- Pour the vanilla yogurt cream over the fruit and gently toss to coat.
- Chill for 15–30 minutes before serving.
