  1. In a large bowl, toss the spinach, mandarin oranges, and cranberries, until combined.
  2. In a mason jar, add the olive oil, dijon mustard and maple syrup (or if you’re lazy like me, you can chuck it straight on the salad). Shake until well combined. Pour dressing over the salad and toss until well coated.
  3. Top with sunflower seeds and enjoy!
