Toasties have been my go-to since I started shifting my workouts to the morning. Quick, protein packed, and always so satisfying. Golden sourdough, creamy Boursin, perfectly fried egg in all of its yolky glory, everything bagel seasoning, and fresh chives.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Heat a couple tablespoons EVOO in a non-stick skillet set to just below medium. Once heated, cracked in your egg and season it with salt, pepper, and red pepper flakes. As it cooks, spoon the hot EVOO onto the egg white, specifically around the yolk. This will accelerate the cooking of the white while keeping your yolk runny and golden.
  2. In the meantime, toast up your sourdough until golden and toasty. Once toasted, get your slice onto a plate and slather with soft, unsalted butter and a generous slathering of your Boursin cheese. Once your egg is ready, top your sourdough and sprinkle generously with everything bagel seasoning and some freshly chopped chives.
  3. Easy, delicious, and ready in no time. 🙂
