Gluten Free Ice Cream Sandwiches
I just discovered how simple and fun it is to make homemade gluten free ice cream sandwiches! I use my favorite premade gluten free brownies from Antonina’s to make these ice cream sandwiches with no baking required. They come together with very little effort and are perfect to make ahead for an easy summer dessert at home or while entertaining. I’ve been reaching for my mini food processor constantly lately, and it is perfect for pulsing chocolate candies into little pieces to sprinkle over the ice cream. These cream sandwiches are rich, chocolatey and a fun gluten free treat. Consider this your sign to keep a batch of these gluten free ice cream sandwiches in the freezer for whenever the craving hits.
Ingredients
- 8 pieces8 pieces8 pieces Gluten Free Brownies (Antonina's)
- 5-6 cups5-6 cups5-6 cups Vanilla Ice Cream
- 1/4 cup1/4 cup1/4 cup Chocolate Gems - Unreal
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Before you begin, take the ice cream out of the freezer and let it soften slightly. It should be easy to scoop and spread, but not melted.
- Pulse the chocolate candies in a food processor until they are finely chopped or crumbly, then sprinkle them evenly over the ice cream. Set aside.
- Carefully slice each brownie horizontally through the center to create two thin layers (a top and a bottom).
- Line a loaf pan with the bottom brownie layers, cut side up. For easier removal later, you can line the pan with parchment paper first, leaving a little overhang on the sides.
- Spread the softened ice cream evenly over the brownie layer. Use more ice cream for thicker sandwiches.
- Place the remaining brownie layers on top with the tops facing up.
- Cover and freeze overnight, or for about 18 hours, until ice cream is fully set.
- Carefully remove from the pan. If you're not using parchment paper, you may need to run a knife around the edges first if it feels stuck. If needed, run a knife around the edges first to loosen it. Slice into individual brownie ice cream sandwiches and enjoy!
