The Easiest Beef Enchiladas
These are the EASIEST Beef Enchiladas not just because that's what I chose to name them. They're easy because you only need a few ingredients, minimal time and effort but you DON'T sacrifice flavor!
Ingredients
- 1 lb1 lb1 lb Ground Beef
- 3 Tbsp3 Tbsp3 Tbsp Taco Seasoning
- 0.5 whole0.5 whole0.5 whole Onion, chopped
- 1 whole1 whole1 whole Red Enchilada Sauce - Siete Foods
- 12 whole12 whole12 whole Almond Flour Tortillas - Siete Foods
- 1 Tbsp1 Tbsp1 Tbsp Avocado Oil
- 0.5 cup0.5 cup0.5 cup Monterey Jack Cheese, (or raw cheddar)

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat oven to 350 degrees.
- Brown the ground beef in your skillet.
- Once browned, add onion + taco seasoning and sauté for a few minutes.
- Add 1/4 cup Enchilada Sauce to the mix and stir.
- Heat Avocado Oil in skillet to warm each tortilla for about 3-5 seconds in order to make them easier to roll.
- Add about 3 Tbs of beef mixture to each tortilla, roll them up and place into your 13x9 glass pan.
- Once all tortillas are rolled, pour the rest of the Enchilada sauce over the top.
- If you have leftover beef mixture, add to the top of the enchiladas.
- Cover and bake 20 minutes.
- Remove cover once baked, add cheese if using and return to the oven for an additional 5 minutes until cheese is melted.
- Serving with Cilantro and Avocado is highly recommended!
