Blueberry Kiwi Summer Salad (Edit recipe)

This summer salad is SO refreshing! When you want something that tastes delicious and is also nutrient dense! As with almost all of my recipes, this one is adaptable! Take this recipe and add some Grilled Shrimp or Chicken to it for added Protein. Avocado adds a nice amount of quality Fat and I've also included some chopped Basil and Mint as well. My goal is to always give you the solid recipe while allowing you the freedom to play with ingredients to open up your own creativity in your food! Enjoy!

Salad Ingredients



Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Add all of the Salad Ingredients to a large bowl and toss.
  2. In a small blender, add Dressing Ingredients and blend until smooth.
  3. Pour dressing over the salad and toss.
  4. Serve as a side dish OR make it your main by topping with Protein of your choice.


**If your dressing seems a bit too thick, thin it out with 1/2 Tbs of warm water. **This will serve 5 as a side salad OR 2 as a main dish when you top with the protein of your choice.
