- 222 Weetabix

- 1 Tbsp1 Tbsp1 Tbsp Unflavored Collagen Peptides Powder - Further Food, about 1/2 scoop

- 0.25 tsp0.25 tsp0.25 tsp Pure Vanilla Extract

- 1 pinch1 pinch1 pinch Salt, optional

Prepare The Crust
- Crush Weetabix into crumbs.
- Stir in monk fruit and salt.
- Add melted butter and 1 tbsp cornmilk. Mix until evenly moistened. (Add a tiny splash more only if needed — texture should feel like damp sand.)
- Press firmly into the bottom of a serving bowl.

Prepare The Pudding
- In a small saucepan, whisk cornmilk, yolk, monkfruit sweetener, collagen, and cornstarch until smooth.
- Cook over medium heat, whisking constantly.
- Once thick and silky (4–6 minutes), remove from heat.
- Stir in vanilla and salt.
- Cool 5–10 minutes (it thickens more as it cools).
