White Chocolate Covered Eggnog Cookies
These eggnog cookies are the perfect way to get in the Christmas spirit!
Ingredients
- 1.75 cup1.75 cup1.75 cup Almond Flour
- 0.25 cup0.25 cup0.25 cup Tapioca Starch
- 1 cup1 cup1 cup Cane Sugar
- 1 tsp1 tsp1 tsp Baking Powder
- 1 whole1 whole1 whole Egg
- 0.5 cup0.5 cup0.5 cup Cashew Butter
- 2 Tbsp2 Tbsp2 Tbsp Vegan Eggnog, Eggnog Nutpods
- 1 cup1 cup1 cup White Chocolate

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Preheat your oven to 350 degrees.
- Line a cookie sheet with parchment paper.
- In a mixer, add all of your ingredients. Mix together until your batter becomes cookie dough.
- Roll into cookie dough balls and place on baking sheet.
- Bake for 12-15 minutes, remove from oven and let cool.
- Melt a cup of white chocolate and dip your cookies to cover them. Sprinkle with Christmas sprinkles and enjoy!
Notes
I used the ground up eggnog nut butter, but feel free to use regular cashew butter!
