White Chocolate Matcha Ice Cream bars
These White Chocolate Matcha Ice Cream Bars are one of my favorite ways to enjoy matcha. Made with simple ingredients in one bowl, they’re a no-bake, gluten-free and dairy-free treat with the creamiest texture and a smooth white chocolate coating. Honestly, this feels like peak adulting… when something this simple ends up being the highlight of your day!
Ingredients
- 2 cups2 cups2 cups Almond Milk Yogurt
- 2 Tbsp2 Tbsp2 Tbsp Matcha Collagen Peptides Powder - Further Food

- 2 tsp2 tsp2 tsp Matcha Green Tea Powder

- .25 cup.25 cup.25 cup Maple Creemee Nut Butter - Mixed Up Foods

- 1 tsp1 tsp1 tsp Pure Vanilla Extract

- 1 cup1 cup1 cup Organic Vegan White Chocolate Bar - Pascha Chocolate Co.

- 1 tsp1 tsp1 tsp Coconut Oil

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add everything to a blender or bowl (except chocolate + coconut oil)
- Blend or whisk until super smooth and creamy
- Taste and adjust sweetness if needed
- Pour into popsicle molds
- Freeze for at least 4–6 hours (or overnight)
- Once frozen melt the chocolate with coconut oil and dip each fudgsicle into the chocolate
- Let set and enjoy!
Notes
Feel free to add a sweetener such as honey or maple syrup if you like it a bitter sweeter 🙂
