Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Play dates, cut side up, on a parchment-lined sheet pan.
  2. Place pretzels in resealable sandwich bag; close bag. Mash pretzels with a kitchen mallet (you want some pretzel powder and some smaller pretzel pieces). Cut a small corner off bag to use like a piping bag to fill dates with crushed pretzel (you will likely have some crushed pretzels leftover).
  3. Place white chocolate chips and coconut oil in a small, microwave-safe bowl. Melt in 15-second intervals in microwave, stirring in between each one, until just melted and smooth.
  4. Use fork to lift one pretzel-stuffed date into melted white chocolate. Dip fork in white chocolate to drizzle back-and-forth over dates to look like mummy bandages. Use fork to lift date up so excess white chocolate drips back into bowl, then use fork to place date back onto parchment-lined sheet pan. Use clean tweezers to add 2 candy eyes before white chocolate sets. Repeat with remaining dates.
  5. Place dates in fridge for 20 minutes for white chocolate to set. Store date mummies in airtight container in fridge for up to 5 days.
