Habanero Berry Bacon Chicken Sandwiches
It’s picnic season & these mouthwatering bacon chicken sandwiches need to be in your picnic basket. Tender, pasture-raised U.S. Wellness Meats boneless, skinless chicken breasts are seasoned with garlic & herb seasoning then brushed with Profanity Jam Habanero Berry Jelly during the last few minutes of cooking, creating the most luscious, flavorful chicken you have ever tasted. Profanity Jam Habanero Berry Jelly is also used to make a delicious habanero berry mayo that is layered throughout these delicious, picnic-perfect sandwiches.
Ingredients
- 2 - 3 Tbsp2 - 3 Tbsp2 - 3 Tbsp Extra Virgin Olive Oil
- 1 lb1 lb1 lb Pasture-raised Chicken Breasts - US Wellness Meats, Thaw in fridge overnight before use
- 2 tsp2 tsp2 tsp Garlic & Herb Seasoning - Primal Palate
- 6 Tbsp6 Tbsp6 Tbsp Berry Habanero Jam - Profanity Jam, Divided use
- 6 Tbsp6 Tbsp6 Tbsp Vegan Mayo - Primal Kitchen, *Vegan mayo used to accommodate egg allergy*
- 4 whole4 whole4 whole Hamburger Buns, Split
- 4 - 8 pieces4 - 8 pieces4 - 8 pieces Lettuce, Green Leaf, 4-8 leaves depending on size (if leaves are small, use 2 per sandwich)
- 4 pieces4 pieces4 pieces Bacon, Cooked bacon
- 4 whole4 whole4 whole Strawberries, Fresh strawberries; stemmed and sliced thin
- 1 - 2 whole1 - 2 whole1 - 2 whole Jalapeño Pepper, Fresh jalapeños; stemmed, seeded & sliced thin (optional)
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add olive oil to large, nonstick skillet over medium heat. Place two chicken breasts in skillet. Sprinkle half the garlic & herb seasoning over chicken; cook 5-7 minutes. Use fork to turn chicken over; sprinkle remaining garlic & herb seasoning over chicken.
- Continue cooking chicken about 3-4 minutes; spoon 1 Tbsp habanero berry jelly over each chicken breast. Spread jelly all over top & sides of chicken using a basting brush. Continue cooking chicken about 2-4 minutes, then turn chicken over and coat other side with remaining habanero berry jelly in skillet. Once chicken is cooked through, remove from skillet to cutting surface. Cut each chicken breast in half to fit hamburger buns.
- In small bowl combine mayo & remaining 4 Tbsp habanero berry jelly.
- To assemble sandwiches, spread a small dollop of habanero berry mayo over bottom bun, then top with lettuce & add a small dollop of habanero berry mayo on top of lettuce. Top lettuce with 1 piece of chicken. Top with bacon and another dollop of habanero berry mayo, then top with sliced strawberries & sliced jalapeños (if using). Top strawberries & jalapeños with a small dollop of habanero berry mayo then close sandwiches with top bun. Makes 4 sandwiches.
Notes
Recipe is dairy-free, egg-free & nut-free and can easily be made gluten-free if you use gluten-free hamburger buns. To pack for a picnic, wrap each sandwich individually. When packing picnic basket, place sandwiches on top of everything else in the picnic basket so the buns do not get crushed. If you’re not a big sandwich fan, you should make the chicken. It is absolutely delicious by itself or served over mixed greens with sliced strawberries & bacon (and don’t forget to drizzle some habanero berry jelly over the top as a salad dressing substitute). Truly so good!
