Roasted Delicata
- 2 whole2 whole2 whole Delicata Squash, halved, deseeded and sliced
- 2 Tbsp2 Tbsp2 Tbsp Olive Oil
- 1 tsp1 tsp1 tsp Cinnamon, Ground
- .5 tsp.5 tsp.5 tsp Paprika
- .25 tsp.25 tsp.25 tsp Sea Salt
- .25 tsp.25 tsp.25 tsp Black Pepper
Salad
- 4 cups4 cups4 cups Lettuce, Spring Mix Salad Greens, Spinach, kale, arugula
- .5 cup.5 cup.5 cup Vegan Feta (Violife "Just Like Feta")
- .25 cup.25 cup.25 cup Goji Berries
- 0.25 cup0.25 cup0.25 cup Pepitas, Raw
Dressing
- 2 Tbsp2 Tbsp2 Tbsp Extra Virgin Olive Oil
- 2 Tbsp2 Tbsp2 Tbsp Balsamic Vinegar
- 1.5 Tbsp1.5 Tbsp1.5 Tbsp Dijon Mustard
- 1 tsp1 tsp1 tsp Maple Syrup, Pure
- 2 - 3 pinch2 - 3 pinch2 - 3 pinch Salt and Pepper

- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Toss the delicata squash rings with olive oil, cinnamon, smoked paprika, salt, and pepper.
- Spread the squash evenly on the baking sheet and roast for 20-25 minutes, flipping halfway through, until tender
- In a small bowl, whisk together olive oil, balsamic vinegar, Dijon mustard, maple syrup, salt, and pepper until blended.
- In a large salad bowl, layer the mixed greens, roasted squash, crumbled feta, goji berries, pumpkin seeds
- Drizzle the dressing over the salad just before serving. Toss gently to combine.
