These apple pancake rings are a fun new way to eat pancakes! They are basically pancake covered apples… or apple stuffed pancakes... Whatever you want to call them, they’re so easy and quick and only require a few ingredients! The apple in the middle gets slightly soft and pairs perfectly with the fluffy pancake on the outside and the creamy cinnamon yogurt dip. These flavors also make this a great breakfast for fall. Ingredients

  • 1 Gala Apple, large, or apple of choice
  • 1 cup Pancake Mix, I like Kodiak Cakes Classic Plant-Based Flapjack & Waffle Mix
  • 0.5 - 0.75 cup Water, enough to thin out the pancake mix into a batter, or according to pancake mix package instructions
  • 1 Tbsp Vegan Buttery Spread, for frying (or coconut oil)
  • Cinnamon Yogurt Dip

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Slice apple into discs, cutting through the core. Use a small cookie cutter or knife to cut out the middles.
  2. Mix pancake mix with water until a batter forms.
  3. Preheat a pan with vegan buttery spread on medium-low heat.
  4. Cover an apple disc in pancake batter and let any excess batter drip off, then place in the pan. Repeat with remaining apple discs.
  5. Cook 3-4 minutes on each side or until golden brown.
  6. Mix together all ingredients for the yogurt dip. Serve and enjoy!
