Shredded Chicken in the Slow Cooker
I love how flexible this shredded chicken is—it’s my ultimate meal prep hack. I like to make a big batch and use it in all kinds of dishes throughout the week. - Season the chicken breasts with salt, pepper, and garlic powder on both sides, then place them in a single layer in the slow cooker. Pour the chicken stock over the seasoned chicken.
- Cover the slow cooker with the lid and cook on high for 4–5 hours, or until the chicken is fully cooked and shreds easily. Slow cookers can vary, so your chicken might be ready sooner. Use a meat thermometer to ensure the internal temperature reaches 165°F.
- Once the chicken is cooked, grab two forks to shred it—it’s easy to do right in the slow cooker or on a cutting board if you prefer. If you shred it on the cutting board, just toss it back into the slow cooker. Let it hang out on the warm setting for about 10–20 minutes to soak up all those flavorful juices—it makes a big difference!

Feel free to make this slow cooker shredded chicken your own! If you’re watching your sodium intake, swap in low-sodium chicken stock or water, and adjust the salt to taste if using regular stock. Since slow cooker times can vary, it’s a good idea to check on the chicken about halfway through and make adjustments if needed.
