Naked Chicken (paleo)
I absolutely love a good tender roast chicken. It is simple, you can pair it with almost anything. But, the weather in Hawaii can be quite warm and I only rarely use the oven. Therefore, using the InstantPot is an amazing and fast way to get a tender chicken without heating up the entire house.
I call this recipe ‘naked’ because, even if you sear the chicken beforehand the skin won’t be as crispy as it will when oven baked. Personally, I don’t like chicken skin unless it is crispy. I peel the skin off - thus ‘naked’.
Don’t forget to save the chicken carcass to make homemade chicken stock.Ingredients
- 1 whole1 whole1 whole Whole Chicken, about 4 lbs
- 1 cup1 cup1 cup Chicken Stock
- .5 whole.5 whole.5 whole Onion, large dice
- 3 cloves3 cloves3 cloves Garlic, rough chop
- 1 tsp1 tsp1 tsp dried Rosemary
- 1 tsp1 tsp1 tsp Dried Parsley
- 1 tsp1 tsp1 tsp dried Basil
- 1 tsp1 tsp1 tsp dried Thyme
- 2 tsp2 tsp2 tsp Sea Salt
- 1 tsp1 tsp1 tsp Black Pepper, omit if AIP

- Rinse the chicken off and place the chicken in breast side up into the InstantPot.
- Add the stock, pouring it all over the chicken.
- Top with remaining ingredients.
- Cook (sealed) on Soup time, or for 30 minutes.
- Let the pressure release naturally.
- Check temperature between breast and leg, needs to be 165 degrees or more to be cooked through.
- If it is not then set it on 5 more minutes and check again, but typically 30 minutes is enough.
Notes
You can add a Tbsp or two of butter or ghee on top of the chicken if you like. This chicken is super moist and yummy but does not have an over riding flavor so it can be eaten plain or used in any dish you like. Enjoy
