Rainbow Rolls (Edit recipe)

Loaded with gorgeous vegetables, these rolls will spark all your senses. During the hot months I often prepare meals without ever turning the oven on. I hate heating up the entire house to make a meal that will be eaten in just a few minutes.

I love a quick and easy recipe that allows for flexibility to change up the ingredients based on personal preference and what you have on hand. I think you will enjoy this fast lunch that even the kids can help prepare.

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. Cook the chicken tenders and cool, you can season these with whatever spices you enjoy.
  2. Using a deep plate or pie plate pour the water in and submerge one piece of the rice paper at a time.
  3. Let the paper sit in the water for 20-30 seconds.
  4. Put onto a dry cutting board and make sure it doesn't have any wrinkles.
  5. Layer the chicken and vegetables in middle, similar to how you would build a burrito.
  6. Roll the paper up like a burrito. Enjoy

Notes

To make this even easier you can use rotisserie chicken from the grocery story. You can mix up the protein and vegetables to what is in season and what flavors you prefer. Have fun and focus on brightly colored vegetables so your roll is gorgeous! Your eyes will appreciate the beauty of your hard work. You can use a dipping sauce like sweet chili, shoyu, or a thai or eat them as is. I love flexible recipes that allow for your own individuality to shine.
