Pork-less Charcuterie Board
Traditional Charcuterie boards typically have cured pork meats such as prosciutto, genoa salami, chorizo, ham and sausages. but I was once challenged to put together a Charcuterie board without using any pork products... so I created one using Shaved turkey, Vegan Ham and Smoked Salmon instead. Add in a variety of cheeses (hard, semi-soft, blue and cream cheese), fresh veggies and fruit, dried fruit and nuts, condiments (fruit jams, preserves or honey), pickled items (olives, pickles, capers), some chips/ crackers to serve and you have a beautiful No-pork, No-beef Charcuterie board.
Ingredients

- 5 - 6 whole5 - 6 whole5 - 6 whole Vegan Deli Ham, sliced
- 6 oz6 oz6 oz Gouda cheese, cut into wedges
- 6 oz6 oz6 oz Aged Cheddar Cheese, cut into bite sized pieces
- 6 oz6 oz6 oz Brie Cheese, cut into wedges
- 6 oz6 oz6 oz Gorgonzola Cheese
- 4 oz4 oz4 oz Whipped Chive Cream Cheese
- 1 whole1 whole1 whole Cucumber, sliced
- 0.25 cup0.25 cup0.25 cup Baby Carrots
- 0.25 cup0.25 cup0.25 cup Radish, sliced
- 0.5 cup0.5 cup0.5 cup Cherry Tomato
- 1 whole1 whole1 whole Fuji Apple, sliced
- 1 whole1 whole1 whole Orange, peeled and segments separated
- 1 bunch1 bunch1 bunch Red Grapes
- 0.25 cup0.25 cup0.25 cup Almonds
- 0.25 cup0.25 cup0.25 cup Dried Apricots
- 0.5 cup0.5 cup0.5 cup raw Pistachios
- 0.25 cup0.25 cup0.25 cup Raspberry Jam
- 10 whole10 whole10 whole Pickles
- 2 Tbsp2 Tbsp2 Tbsp Capers
- 0.25 cup0.25 cup0.25 cup Green Olives, pitted
- 1 cup1 cup1 cup Pita Chips
- 3 sprigs3 sprigs3 sprigs Mint Leaves, or rosemary, for garnish
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Aim to use at least 3 variety of meats. I used Deli-style Shaved Turkey, Smoked Salmon and Vegan Ham here. I like including a pescatarian and vegan option. Fold meats in a variety of patterns and arrange them on the board.
- For Cheeses, aim for 5 varieties - a Hard cheese such as Gouda, Firm cheese such as Cheddar, Semi-Soft cheese such as Brie, Blue cheese such as Gorgonzola and Herb Cream cheese. Pre-slice the cheeses into a few wedges, remove cream cheese in a small bowl and arrange them on the board.
- For Fresh Veggies, I used Cucumber, Baby Carrots, Radish and Cherry Tomatoes. Wash, dry and pre-cut fresh veggies. Place them in various places on the board. Place Cherry tomatoes in a bowl so they are not running around on the board.
- For Fresh Fruit, I used Apples, Orange and Grapes. Wash, dry and pre-cut fruits. Place them next to the cheeses they pair well with.
- For Dried Fruit & Nuts, I used Almonds, Apricots and Pistachios. Arrange these in places where there are some gaps that need filling. You can also arrange them next to the soft cheese.
- For Condiments, I used Fruit Jam/Preserves but you can also include Honey.
- For Pickled items, I used Pickles, Capers and Olives. Keep condiments and pickled items in jars and place them next to the cheeses they pair well with.
- Arrange your favorite chips and crackers in the remaining spaces all over the board.
- Lastly, tuck in some herbs such as mint or rosemary to add some freshness to your board.
Notes
- Aim for a variety of texture, flavors and colors.
- Arrange items that pair together, next to each other. For example, place Smoked Salmon, cream cheese and capers close to one another.
- Don't forget the cheese knives and some toothpicks.
