Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
  1. In a bowl, combine all the ingredients - corn, avocado, red onion, cilantro, salt and lime juice.
  2. Add ground cumin and cayenne, optional.
  3. Stir well until combined. Serve immediately or chilled.
  4. Enjoy as a snack with tortilla chips, gluten-free crispbread or pita chips.

Notes

If you are planning to make this salsa ahead of time, be sure to store it in an airtight container and adding sufficient lime juice to prevent the avocados from browning. Alternatively, you can also hold off of adding the avocado until the salsa is ready to be served. If using canned corn, be sure to drain the liquid before using. If using frozen corn, cook them in boiling water for 2-3 minutes and cool them completely before adding to the salsa. You can also use fresh corn off the grill for this salsa. If you find raw red onions too strong for your liking, reduce the quantity or soak the onions in cold water first. For maximum flavor, use freshly squeezed lime juice instead of the bottled one. Some suggestions on other ingredients to add - black beans, minced garlic or garlic powder and diced jalapenos (de-seeded). Some ways to enjoy this salsa - in Shrimp or Fish tacos, over grilled fish, grilled chicken or steak.
