White Chocolate Carrot PB Bites
These no bake white chocolate carrot peanut butter bites were so easy to make and are an easy way to add a veggie to a treat!
I used a silicone mini muffin tin for these and they popped out very easily - no need to spray.
Ingredients
- 1 whole1 whole1 whole Carrots, shredded or finely chopped
- 0.333 cup0.333 cup0.333 cup Peanut Butter
- 2 Tbsp2 Tbsp2 Tbsp Coconut Flour, any grain free flour should work
- 0.5 cup0.5 cup0.5 cup Pascha Organic Vegan White Baking Chips, melted

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Mix everything up until the white chocolate in a bowl. Scoop into silicone muffin tin 3/4 of the way and freeze for 35 min.
- Then melt white chocolate, take out the pan from the freezer, and pour 1 TBS on top of each bite.
- Freeze for 15 min and then pop out of the tin! Can be stored in the freezer or fridge!
