Leftover Salmon Salad
I’ll be the first to say I LOVE leftovers, but not ALL leftovers are the same. Fish tends to be my no-no spot when it comes to reheating. Instead of wasting this salmon, I’ve whipped it together as a quick salad (mayo, mustard, onion, & chives). How do you repurpose your leftovers?
Ingredients
- 2 pieces2 pieces2 pieces Wild Caught Salmon Filet, Fully Cooked, chilled
- 0.25 cup0.25 cup0.25 cup Onion, diced
- 1.5 tsp1.5 tsp1.5 tsp Yellow Mustard
- 0.333 cup0.333 cup0.333 cup Mayonnaise, Sub for Greek Yogurt
- .5 bunch.5 bunch.5 bunch Chives, finely chopped
Process
Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- 1. Take leftover, chilled salmon and carefully break apart using a fork.
- 2. Add chopped onions, chives, mayonnaise, and mustard and stir.
- 3. Serve as is or with crackers. Provecho Amigos!

I like to use whatever fresh herbs or veggies I have! Mix and match your favorite ingredients!
