Huevos con Weenies (Eggs with Sausage)

- 7 whole7 whole7 whole Eggs
- 0.5 whole0.5 whole0.5 whole Yellow Onion, finely diced
- 6 whole6 whole6 whole Beef Hot Dogs, I use Applegate Natural Uncured Beef, diced
- 4 whole4 whole4 whole Almond Flour Tortillas - Siete Foods
- 1 Tbsp1 Tbsp1 Tbsp Sour Cream
- 1 - 2 Tbsp1 - 2 Tbsp1 - 2 Tbsp Mild Salsa Roja - Siete Foods
- 1 - 2 pinch1 - 2 pinch1 - 2 pinch Mexican Cheese Blend, Shredded

Note, these instructions are written assuming the standard serving size, since you have modified the number of servings, these steps may need to be modified for best results
- Add a small amount of avocado oil to a pan and add diced onion. Cook until light brown and translucent.
- Add diced hot dog wieners, and lightly sauté.
- Once golden, crack and scramble eggs. Cook until eggs are set.
- Eat as is or serve in a tortilla.
- If serving in a tortilla, heat Siete tortilla on both sides for 15-20 seconds.
- Add eggs and sausage mixture, then top with cheese, salsa, and sour cream. Provecho Amigos!
